As for you who do not know, before I became a stay at home mom, I worked in the medical field. I had two licenses and I was pretty good in my profession.I was also paid well. When I decided to quit my job, I ceased to update my skills and if I ever go back to my profession, I have to update my clinical experience.Three years ago, I had been accepted to do a clinical in a big and best hospital in the country to do just that. I have been stalling it because I thought my family will fall apart if I am not around… I deemed my husband as incapable of raising our kids and me, the super mom who will save the day. When I went home, in the Philippines this year, my dad jarred me into reality. Pretty much he told me, “You will stay as what you are right now if you stick to what you are currently doing – no chance of improvement and progress.” When he said that, I was furious. I was furious because my dad had seen through me…the loneliness, the boredom and the anger of my stay at home mom situation. He saw that I am capable for more. I was furious because he was telling the truth and he said it so bluntly.
Jarred by my dad’s harsh reality check, I accepted the clinical offer feet first. Although I am afraid, I got the courage. My husband was very supportive and my children , although they were sad, I know that they will be alright and they will be capable without me. Surprisingly, I am even excited about it. I am going to live in a big city, particularly New York and be surrounded by smart doctors from Columbia University.I will be mentored by the best Computed Tomography scanners in the country or if not in the world. Everyday, I will ride a bus and a train and I will not cook but simply study so I will not be updating this blog often by then. However, I will update you of my experience in New York, (check Instagram) I promise… But really, I am most excited of starting anew. It feels like I am trekking to an unknown adventure yet I am certain that I will come out strong and renewed. As for my relationship with my daddy, we are OKAY as pie. In fact, I love him more and I am so grateful for not sugar coating things with me. The 4th commandment said, ” OBEY YOUR PARENTS SO THAT YOU WILL INHERIT THE LAND.” I hope that this promise will come to pass… I love you Papa…

Easy 6 Ingredient Meatloaf with Sourcream and Catsup
- 2 lbs ground beef
- 2 eggs slightly beaten
- 1 cup dairy sour cream
- 1 tsp mustard
- 1/4 cup catsup
- 3/4 cup bread crumbs
- onion soup mix to taste adjust taste accordingly
- Heat oven to 350 F. Mix ground beef, eggs, sour cream,catsup, mustard and bread crumbs. Add in the onion mix. Start with 1 tablespoon of onion soup mix and test by forming a little patty and fry it in a frying pan. Adjust taste according to your liking. Pour in mixture into ungrease bread pan . Bake uncovered until done 45 to 50 minutes. Brush meatloaf with catsup as desired.
- You can use 2 smaller size bread pans on this or jelly roll pan.
