How to cook salmon? I must say that there are so many ways in making a delicious salmon recipe. In fact, I have shared a few in this blog. Here is SALMON MEATBALLS, STIR FRIED TERIYAKI SALMON, SALMON WITH AVOCADO SALSA. You can bake your salmon or grill it, but today, let us make a coconut sauce with tons of yellow curry powder to make it spicy; then we will add carrots and spinach to round up the deliciousness in this salmon meal. And then you can pair it with rice to make it an Asian meal...
But before I share with you this recipe, I just have to share to you how I got "lucky" this week.
A year ago, I was so confused about how I can go back to my medical profession. I was asking God, no, blaming Him about why I became a full time housewife and miscalculated the ease of transitioning from a stay at home mom to a working mom again. I was throwing my hands up to the heaven in anger and resentment. I was mad at the Creator of the heaven and earth and 'insisted" to Him my "plans." Through my misery and desperation, and after all the wallowing, I finally went down on my knees and prayed with a heart of surrender. After such, I was inspired to heed my dad's advise to go to NY and do my clinicals.With my two black suitcases, I went to New York City and worked my butt off for 5 months - without pay. Throughout the process, I gained friends and I got re-introduced of what I really am- I am not a weakling after all and, I came to get to know myself again - as a strong woman who placed herself last so that she can take care of her children and who is now ready to reclaim herself and conquer the world once again. With my fingers crossed, and my faith on, I overcame loneliness and fear.I am so grateful to God for that. ..God has planned everything after all.
Now I am back in KS, equipped with all the new knowledge and experience from New York, I am turning in application letter hoping that somebody will take a second look at my resume'. The sacrifices I made paid off, because currently, I am offered 2 jobs , 2 face to face interview; I survived and I got offered to a job wherein I was interviewed by 5 people. These left me stunned and amazed on how God work His plans if WE ARE JUST WILLING TO WORK HARD AND MAKE SACRIFICES FOR OUR DREAMS.
Have you heard about the quote, 'WHEN IT RAINS, IT POURS?" This is just what is happening to me . In fact, just this morning, I had refused a well-paying job and accepted another , which pays $10.00 less from the former, but I believe that I will grow emotionally and mentally in this place I chose no matter how much it pays . The people, from my observation, seem content, happy and great. Although I am keeping my finger crossed in this choice, I am so thankful to God for this "luck" or blessings that I am in right now. I am going to make the best of this opportunity .I am going to do my best in my job. I will not worry and I will learn and work really hard and take care of this new found chance.So for you stay at home moms out there, " DON'T FRET, THIS MOMENT WITH YOUR FAMILY IS JUST THE RIGHT MOMENT. ENJOY IT, BECAUSE WHEN THE KIDS ARE GROWN AND IF YOU WILL MAKE A DECISION TO GO BACK TO WORK,JUST LIKE ME, YOU WILL BE EQUIPPED WITH COURAGE AND STRENGTH TO FACE ANYTHING. JUST DO IT ONE STEP AT A TIME.EVERYTHING WILL WORK OUT FINE." Believe me, I was in the same predicament as you are and I promise, " ALL THINGS WORK TOGETHER FOR THE GOOD TO ALL WHO LOVE HIM. - 1 lb salmon,slice into cubes
- 1 piece medium sized carrots, cut into bite size pieces
- 2 stems celery, cut into bite size pieces
- 1 handful spinach
- 1 can 14 oz coconut milk (or lesser)
- 1 medium size onions,chopped
- 1 tbsp canola oil
- 1 tsp yellow curry powder or more ( according to your preference)
- salt to taste
- Heat cooking oil then add in the onion and cook until transparent. Add in carrots and celery. Pour the 1 can coconut milk and let it simmer. If you do not like a lot of soup on this salmon curry, slowly add coconut milk and adjust accordingly. Then , Add in the salmon simmer until salmon is cook through. Add in salt and curry powder. Add the spinach and turn off heat. Serve while hot.
