Paula Deen’s Poppy Seed Salad Dressing and Watercress Salad
- POPPY SEED DRESSING:
- ½ cup fresh grapefruit juice
- ⅓ cup canola oi
- ½ to 1 tsp salt ( I used ½ tsp, adjust accordingly)
- 1 tsp low-fat mayonnaise
- 1 tsp Dijon Mustard
- 1 tsp honey or Agave ( I used Agave)
- 1½ tsp ground black pepper
- 1½ tsp poppy seed
- FOR THE VEGETABLES:
- 1 bunch watercress or arugula
- 1 avocado
- 2 tangerine
- grapefruit, peeled and sectioned
- Place the grapefruit juice in a bowl and add in the rest of poppy seed dressing ingredients and stir.Place in a container with cap and serve.
- Divide watercress in four serving place and add in the tangerine, grapefruit and avocado. Drizzle with the poppy seed dressing.
