Hi, guys! Today, we are making this very simple meal called Kalabasa Corned Beef Nuggets. This is perfect as snacks for the kiddos who are stuck at home and for you, “not so kiddos” like me, who are bored – you have nothing else to do but eat.
This kalabasa Corned Beef Nuggets is really easy; although the shredding part of the squash is kinda complicated. I have to be honest with you, the shredding of the squash is not fun at all… So what I did was I shredded the whole squash and just took 3 cups out of it, and I froze the remaining shredded squash for next time. When you are ready to use the shreded squash, just make sure you drain it from excess water.
OR, you can double the recipe just get everything done. The mixture of this recipe is freezable. So if you get tired of shaping the nuggets, just shape just enough to cook and freeze the leftover mixture. Just thaw it on the counter before cooking.
SO WHAT IS KALABASA?
Kalabasa is the Tagalog word for squash. In this post, I used Butternut squash in particular because it’s readily available in my store here; but in the Philipines, I usually made it using Kabocha —- it doesn’t matter what type of squash family you use, the outcome is still a very delicious and egg-y appetizer.
NOTE TO SELF—You have two options in cooking this Kalabasa Corned Beef Nuggets
You can bake this or fry these Squash nuggets . But I really prefer it fry… because anything oily is delicious; but if you want a healthier version, you can bake it. Just make sure you spray the nuggets with non stick oil and bake it at 350 F until cook through.
However way of cooking you use, it will yield a liquid y middle. That doesn’t mean that the nuggets are not cooked. It‘s just due to the liquid/fat from the corned beef.
WHAT ARE THE INGREDIENT FOR THIS BUTTERNUT CORNED BEEF NUGGETS?
- Butternut squash or Kobocha squash
- bread crumbs
- corned beef
- garlic, salt, pepper

Kalabasa Corned Beef Nuggets Use that abundant squash in your garden
- 1 can corned beef
- 2/3 cups bread crumbs
- 2 teaspoons salt
- 2 teaspoons garlic powder
- 1 teaspoon pepper
- 2 eggs
- 2 tablespoons cornstarch
- 3 cups shredded Kalabasa
- PLUS 1 CUP BREAD CRUMBS FOR BREADING
- 2 cups cooking oil
- In a medium sized bowl, mixed all of the ingredients ( except the 1 cup bread crumbs) and form into nuggets size pieces.
- Drench/roll mixture into bread crumbs and fry until golden brown.
- Drain excess oil in a paper towel and enjoy Kalabasa while hot, you can leave some for next day and microwave it.
