1 1/2 cups tapioca flour
1/2 cup all purpose flour
1 cup brown sugar
3 cups water
1 1/2 teaspoon homemade lye substitute (Homemade Lye Water Substitute)
2 teaspoons Annato powder
Combine all of the dry ingredients in a medium size bowl.
Add in the wet ingredients and mix thoroughly until smooth.
Place mixture in an individual mold and steam for 45 minutes to an hour.
Remove Kutsinta from the mold using a sharp knife and roll into a shredded coconut or shredded cheese.
