This Roasted Eggplant with Cherry Tomatoes should be in your menu list right at this minute. It is easy to make and not to mention very healthy. It is like good health packed in one pot. You can roast this in your oven or you can cook this stove top. As for myself, I made both of them in stove top and oven roasted and still love how it turned out. But for today’s eggplant, I roasted them in the oven because I just want to relax and watch Hoarders in Netflix while waiting for my Eggplants to cook through.
When I was in elementary, we have a gardening classes and I was so awful at it. No matter how much I tried, my plant just died. One of those plant was an eggplant seedling. I did everything I could. I heard that if you sing a melody to your plant, it will grow healthy and it will bear too much fruit, so I did that… I sang my heart out and still it died; I was devastated as I looked around and saw my classmate’s eggplant — which was so green and glorious. Mine was dead and brown while I was so green with envy. So I just simply gave up of the though of planting as my future profession ; but I have never given up eating eggplant because I just love its texture when it is cooked and I love it wrapped around with the saltiness of the soy sauce mixed with the sourness of tomatoes. AND HERE IS THE One Pot Roasted Eggplant with Cherry Tomatoes when I made it the 3rd time…
Ingredients
- 1 large eggplant slice into bit size pieces or 4 pieces small size eggplant
- 3 cloves garlic finely chopped
- 3 teaspoon soy sauce
- 15 pieces cherry tomatoes or grape tomatoes
- 3 teaspoons canola oil
Instructions
- Preheat oven at 365 F. Place eggplant,tomato, garlic in the baking pan and add in soy sauce and oil. Mix ingredients until veggies are coated with soy sauce and bake for 30 minutes or until eggplant is cook through. Add more soy sauce if needed.
- Stove top cooking:
- Heat oil and saute' the garlic. Add the tomatoes and eggplant and continue cooking until eggplant are soft. Season with soy sauce and serve HOT>
