Quinoa Cranberry and Roasted Pumpkin
This Quinoa recipe is perfect for Thanksgiving Side Dish. It has Dried Cranberry and toasted Pumpkin Seed for crunch. The dressing is consist of Key Lime Juice, Sesame oil and a bit of Honey. The Green Onion and Avocado is a MUST here as they will hold all the flavors together, and give out a very subtle tangy aroma. I looooove it! And did you see that dressing ? Yummmy!
It is Vegan Friday, everyone and I am caught in the act… I am now jumping into the Quinoa bandwagon and I am liking it; it is so obvious that I am in love with this whole grain because I just posted this overly delicious Quinoa and Eggplant with Tomato Stir Fry last Sunday and now this different version of Quinoa in a side dish form or if want to call it in a salad form. Guys, I have to come clean! I am eating Quinoa this whole week because last Saturday, I was craving Asian food and I went to my favorite Vietnamese restaurant… and you know what, the good ‘ol me binged and ate like there is no tomorrow… if I remember right, I think I ate all the menus there. So I am guilty (pout) of the mindless eating and I am now making up and reversing those wasted calories, and unhealthy cholesterol that could be forming in my arteries right at this minute. AND WHEN I FEEL GUILTY ABOUT EATING SOMETHING BAD, I HAVE QUINOA TO GO TO NEUTRALIZE THAT. Do you ever have this moment?
But you know what, I do not mind eating Quinoa because it is really good. It is crunchy and it is so filling that a cup of the quinoa and Eggplant with Tomato Stir Fry lasted me 8 hours before I felt any hunger. Now, that is the kind of meal I need and I guess you too. So enjoy this Quinoa meal today and wait for another Quinoa Recipe next week…

Quinoa,Cranberry and Roasted Pumpkin Seed Salad
- 1 1/2 cups cooked Quinoa
- Juice of 1 piece Key Lime
- 1/2 to-2/3 cup Dried Cranberry
- 1/2 to 2/3 cup Pumpkin Seed roasted
- 5 stems green onions
- 3 tablespoons Sesame Oil
- 2 tablespoons Honey
- 1 teaspoon brown or white sugar
- 1 large Avocado slice into bit sized pieces
- pinch of Salt
- pinch of pepper
- Put Quinoa,Pumpkin Seeds and Cranberry in a medium sized bowl. Add in Key Lime juice,sesame oil,sugar and mix. Add salt and pepper to taste. Refrigerate overnight and serve. After refrigerating, add more sugar or sesame oil if desired
