This Purple sweet potato pie is quick and easy to make. It's quick when the potatoes are steamed in the Instant Pot. You can of course the potatoes by boiling them stovetop.

- 1 lb Purple Sweet Potato mash
- 1/3 cup granulated sugar
- 1/2 cup coconut milk
- 2 eggs
- 1/2 teaspoon cloves
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup butter melted
- 1 ready-made frozen pie crust thawed
- 2 tsp Ube flavoring optional, but highly recommended to add color and flavor

How to Cook Purple Sweet Potato Pie
Peel the cooked baked potatoes and put them in a large bowl. Mash them.Add in the melted butter, coconut milk, spices, and sugar.Mash using an electric mixer you can use a masher. When the potatoes are mashed, add in the egg and the Ube Flavoring. Mix for another three minutes to incorporate the egg and the flavoring into the potatoes.
Transfer the mixture to a ready-made thawed pie crust and bake for 50 minutes. Start checking when you can smell the pie, at about 55 minutes.

- The time of cooking depends on how thick your potatoes are. In this case, the sweet potatoes are about one and a half inches thick and five inches long. Add more cooking time if the potatoes you are using are round and thick.
