Super Moist Pumpkin Bread

Super Moist Pumpkin Bread for breakfast is certainly a very good idea. It is filling, moist and delicious. Pair it with tea and you are ready to tackle the day. It's perfect for snacking, too to fill you up quickly.

Equipment

  • Instant Pot Duo Crisp 8 quart
  • 2 Bread Pan 6 x 3 bread pan with 1 1/2 inch deep
  • Conventional Oven
  • parchment paper
  • toothpick or chopstick

Ingredients

Wet Ingredients

  • 1 cup white granulated sugar
  • 1/2 cup dark brown sugar
  • 2 large eggs
  • 1/2 cup canola oil
  • 1/4 cup milk
  • 1 1/2 cup pumpkin puree
  • 1 1/2 tsp vanilla extract

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 tsp  pumpkin pie spice please see notes for the recipe
  • 1/2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Cream Cheese Frosting

  • 8 oz Cream Cheese
  • 1/2 cup powdered sugar
  • 1 1/2 tsp teaspoons vanilla extract

Instructions

Prepare the Batter

  • Brush 6 x 3 bread pan W oil and line with parchment paper. Set aside.
  • Place the granulated white and dark brown sugar in a large bowl. Add in the eggs oil, pumpkin puree, milk, and vanilla extract. Mix until there are no more lumps.
  • Mix all of the dry ingredients together using a wire whisk and add the mixture to the wet ingredients.
  • Divide the batter into the two bread 6 x 3 one- and- a half-inch deep pans and frost the cream cheese frosting to the middle.

Bake in the Oven

  • Place the oven rack in the middle of the oven and preheat it to 390 F. When ready, put the pan in the middle and bake the pumpkin bread for twenty to twenty-five minutes, or until the toothpick comes out clean. Start checking the bread with the toothpick test.
  • Check the picture above. The bread to the right was baked in the conventional oven. The one to the left was baked in the Instant Pot Duo.

How to Cook in the Instant Pot Duo Crisp

  • Follow the how -to make batter instructions.
  • Place the trivet in the inner pot and the handle should be up. Set the pan to the handle making sure it holds the pan properly. Please see the picture above.
  • Cover the Instant pot with the air fryer lid and push the bake setting button. Set the temperature to 390 F and set the timer to twenty-two minutes, but start checking by toothpick test at fourteen minutes.
  • Check the picture above. The bread to the right was baked in the conventional oven. The one to the left was baked in the Instant Pot Duo.

Make the Frosting

  • Place the cream cheese in a large bowl and beat using the hand electric mixer. Add the powdered sugar mix. Add in the vanilla extract and mix until the frosting is smooth. Transfer frosting into a piping bag with # 1 A tip

Notes

  • In this post, I made the whole batter recipe, since I want to make two pans of bread. If you want to make one pumpkin bread, cut the ingredient in half.
