One Pot Roasted Eggplant with Cherry Tomatoes

- 1 large eggplant slice into bit size pieces or 4 pieces small size eggplant
- 3 cloves garlic finely chopped
- 3 teaspoon soy sauce
- 15 pieces cherry tomatoes or grape tomatoes
- 3 teaspoons canola oil
Preheat oven at 365 F. Place eggplant,tomato, garlic in the baking pan and add in soy sauce and oil. Mix ingredients until veggies are coated with soy sauce and bake for 30 minutes or until eggplant is cook through. Add more soy sauce if needed.
Stove top cooking:
Heat oil and saute' the garlic. Add the tomatoes and eggplant and continue cooking until eggplant are soft. Season with soy sauce and serve HOT>
