Instant Pot Air Fryer Ling Cod Taco with Pineapple Salsa

An easy meal made in the Instant Pot. It’s a tasty and filling meal the whole family will love. I used my Homemade Fish Seasoning and it made the dish more flavorful.

Ingredients

Pineapple Salsa

  • 1 can Pineapple
  • 1 medium Red Bell Pepper
  • 1 bunch Cilantro
  • 1 medium red onion
  • 1 lime Juice of lime
  • salt, pepper, sugar to tastes

Fish Ingredients

  • 2 tablespoons Homemade Taco Seasoning please see notes for the recipe
  • 1 lbs Ling Cod fillet into stick
  • 1 large egg beaten
  • 1 cup flour
  • 1 cup Panko Japanese Bread Crumbs
  • salt and pepper to taste

Instructions

Pineapple Salsa

  • Drain the canned Pineapple with juice and slice it into bite-sized pieces and place it into the large bowl.
  • Chop the red bell pepper into small cubes and add to the bowl.
  • Chop the cilantro and red onion into small pieces and add to the bowl.
  • Cut the lime in half and squeeze out the juice. Add more juice if you want it tangier. For me, the juice of one lime was enough.
  • Season with salt and pepper and sugar. Season according to your liking.

How to Cook the Fish in the Air Fryer Duo

  • Pat dry the fillet Ling Cod using a paper towel. Season the fish with Homemade Fish Seasoning. Season on all sides.
  • Beat the egg in a medium-sized bowl and set aside. Place flour and Panko bread crumbs on a flat plate and set aside.
  • Place the Instant Pot Air fryer basket in the inner pot Spray the air fryer basket with nonstick oil.
  • Roll the fish into the flour and dip it into the beaten egg and roll it in the Panko Bread crumbs and shake it to remove excess crumbs. Do the same to the rest of the fish.
  • Arrange the Ling Cod into the air fryer basket and spray the fish with non -stick oil.
  • Cover using the air fryer lid and push the air fryer button. Set the temperature to 400 F and set the timer for eight minutes.
