Crispy and easy Chinese pork belly cooked in the Instant Pot

Air frying time is 46 minutes and I used simple ingredients to make this crispy pork belly.
Course: Main
Cuisine: Chinese
Author: Shobee

Equipment

  • 1 instant pot duo crisp plus air fryer
  • 1 Ice pick

Ingredients

  • 1 1/2 lbs Pork Belly Slabs
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1/2 cup coarse salt to cover the skin I used coarse Kosher Salt here
  • small amount of vinegar

Instructions

  • Put the pork belly slab on a flat surface and trim excess meat to level out the pork belly slab. We need to do this to make the pork belly cooked equally.
  • Using an ice pick, nails, or skewer, poke holes on the skin- lots of holes. Pat dry the belly. Flip the meat and rub it with salt and pepper. Make sure that all nooks are covered with the rub.
  • Flip the belly again and pat dry. Put the pork belly on a tin foil and cover all sides with the foil, leaving the skin open. Refrigerate the pork belly uncovered, overnight to make the slab dry.
  • Brush the pork belly with vinegar and cover the pork belly slab with rock salt. I used coarse Kosher salt in this post.

Preparing the Instant Duo Crisp plus Air Fryer

  • Place the inner pot and put the air fryer basket. Put the prepared pork belly in the air fryer basket and cover it with the air fryer lid. Push the air fryer setting/ Set the temperature at 375 F and set the time to forty-six minutes.
  • When done, gently remove the chunks of salt and push the broil setting for eight minutes.
