Sweet Potato Stir Fry with Coconut Beef

Ingredients
  

  • 2 tablespoon vegetable oil
  • 12 ounces steak
  • 2 cloves garlic
  • 1 medium sized onion sliced
  • 12 ounces sweet potato chopped in cubes
  • 2 tablespoons Thai Red Curry Paste
  • 1 1/2 cups coconut milk

Instructions
 

  • Heat vegetable oil in a large pre heated wok.
  • Add the steak and stir fry for about 2 minutes
  • Add the garlic to the wok and stir fry for another 2 minutes
  • Add the sweet potatoes with the curry paste and coconut milk and bring to a boil.
  • Reduce the heat and simmer until sweet potatoes are tender.
  • Serve hot with rice.
