Adding the Pork and Chili Peppers
Introduce thinly sliced pork belly to the pan and cook until browned and slightly crispy. The sizzling pork will fill your kitchen with an irresistible aroma, building anticipation for the mouthwatering dish that awaits. Incorporate the sliced red chili peppers, stirring them into the pork to infuse the dish with their fiery heat.
Mix in the shrimp paste, thoroughly combining it with the pork and chili peppers. This key ingredient adds a distinctive umami flavor, setting Bicol Express apart from other dishes. After a minute or two, pour the coconut milk and water, ensuring all the ingredients are well-incorporated.
Simmer the dish over low heat for fifteen minutes. This allows the pork to become tender and absorb the rich flavors of the sauce.
Taste and add ground pepper. Add more water and shrimp paste if desired.
Sprinkle the green onions at before serving.
