Leftover Turkey Noodle Soup

Ingredients

  • 3-4 oz Chinese Vermicelli OR Misua
  • 1 inch ginger crushed
  • 2 cloves garlic finely chopped
  • 1/4 cup red onions chopped
  • 4-6 cups of Chicken Broth
  • 2 cups Leftover Turkey shredded
  • 1 tablespoon Canola Cooking Oil
  • salt and pepper to taste
  • Handful of Thai Basil Leaves
  • Handful of Dills

Instructions

  • Heat oil in a deep cooking pan and saute' ginger for 2 minutes add in garlic and saute' for another two minutes. Add in the onion and saute' until transparent. Add the shredded leftover Turkey and add in the chicken broth. Simmer for around 3 minutes. Add the Chinese Vermicelli and cook for around three minutes. Add slat and pepper to taste.Turn off heat.

Notes

You can use any Vermicelli Noodles in this soup. Also, if using the Chinese Vermicelli/ Misua, make sure that you will not overcook the noodles. I usually put the noodle into the simmering broth and mix it a bit and turn off the heat.
