Quinoa,Cranberry and Roasted Pumpkin Seed Salad

Pre - prepared side or salad, you cannot go wrong with easy side. Lightly sour and a mix of sweetness, the aroma of the sesame oil and the crunch of the Pumpkin seeds make this salad a must do in your list; and not to mention, it is SUPER HEALTHY!

Ingredients

  • 1 1/2 cups cooked Quinoa
  • Juice of 1 piece Key Lime
  • 1/2 to-2/3 cup Dried Cranberry
  • 1/2 to 2/3 cup Pumpkin Seed roasted
  • 5 stems green onions
  • 3 tablespoons Sesame Oil
  • 2 tablespoons Honey
  • 1 teaspoon brown or white sugar
  • 1 large Avocado slice into bit sized pieces
  • pinch of Salt
  • pinch of pepper

Instructions

  • Put Quinoa,Pumpkin Seeds and Cranberry in a medium sized bowl. Add in Key Lime juice,sesame oil,sugar and mix. Add salt and pepper to taste. Refrigerate overnight and serve. After refrigerating, add more sugar or sesame oil if desired

Notes

This Quinoa Recipe is a bit sour from the cranberries so you can substitute it with raisin if you wan this salad to be sweet. This is perfect as a side for the Thanksgiving Roasted Turkey or just by itself.
