1 1/2cupscooked Quinoa
Juice of 1 piece Key Lime
1/2 to-2/3cupDried Cranberry
1/2 to 2/3cupPumpkin Seedroasted
5stems green onions
1teaspoonbrown or white sugar
1large Avocadoslice into bit sized pieces
Put Quinoa,Pumpkin Seeds and Cranberry in a medium sized bowl. Add in Key Lime juice,sesame oil,sugar and mix. Add salt and pepper to taste. Refrigerate overnight and serve. After refrigerating, add more sugar or sesame oil if desired
This Quinoa Recipe is a bit sour from the cranberries so you can substitute it with raisin if you wan this salad to be sweet. This is perfect as a side for the Thanksgiving Roasted Turkey or just by itself.
