HOW TO USE UP THAT EXCESS EGGPLANT FROM YOUR GARDEN

medium sized eggplant

large tomatoes

stem green onion

vinegar
start with 1 tablespoon and add more if you want it more sour

teaspoons
sugar

chopped cilantro
Season with salt and pepper
(THIS RECIPE IS VERY VERSATILE. YOU CAN ADD MORE TOMATO
CILANTRO OR MAKE IT SWEETER. SEASON ACCORDING TO YOUR LIKING.
Instructions
Boil or grill eggplant until soft. Let cool mash the eggplant using a fork..Add the rest of the ingredients and season according to your taste.
