Quinoa with Eggplant and Tomato


  • 1 eggplant slice into bite size pieces
  • 1 to mato chopped
  • 1/8 cup onion chopped
  • 4 cloves garlic minched
  • 2 tablespoon cooking oil
  • soy sauce
  • 1 tablespoon of water


  • Heat cooking oil in a pan.
  • Add in garlic and cook until it turns into light golden brown.
  • Add in onion and eggplant.
  • Mix the ingredients so that it will be coated by the oil. Let the eggplant cook (add very small amount of water if necessary ) until the eggplant is soft.
  • When eggplants are soft, add in the tomatoes.Let the tomatoes cook for 3 more minutes.
  • Add in cooked Quinoa and mixed all of the ingredients.


How to Cook Quinoa for this Recipe
1 cup water
1/2 cup Quinoa
Wash Quinoa and drain the water.
Place it in a small saucepan and add in water.
Turn on fire and let the Quinoa boil. Around 10 to 12 minutes,
By this time, You will notice that the water is gone and the Quinoa looked like it popped. You will see that there is also white specks coming out too. This means the Quinoa is already cooked.
