Ingredients

  • POPPY SEED DRESSING:
  • 1/2 cup fresh grapefruit juice
  • 1/3 cup canola oi
  • 1/2 to 1 tsp salt I used 1/2 tsp, adjust accordingly
  • 1 tsp low-fat mayonnaise
  • 1 tsp Dijon Mustard
  • 1 tsp honey or Agave I used Agave
  • 1 1/2 tsp ground black pepper
  • 1 1/2 tsp poppy seed
  • FOR THE VEGETABLES:
  • 1 bunch watercress or arugula
  • 1 avocado
  • 2 tangerine
  • grapefruit peeled and sectioned

Instructions

  • Place the grapefruit juice in a bowl and add in the rest of poppy seed dressing ingredients and stir.Place in a container with cap and serve.
  • Divide watercress in four serving place and add in the tangerine, grapefruit and avocado. Drizzle with the poppy seed dressing.
