EASY SUPPER IDEA- SALMON WITH COCONUT SAUCE and WHEN IT RAINS IT POURS

Ingredients
  

  • 1 lb salmon slice into cubes
  • 1 piece medium sized carrots cut into bite size pieces
  • 2 stems celery cut into bite size pieces
  • 1 handful spinach
  • 1 can 14 oz coconut milk or lesser
  • 1 medium size onions chopped
  • 1 tbsp canola oil
  • 1 tsp yellow curry powder or more according to your preference
  • salt to taste

Instructions
 

  • Heat cooking oil then add in the onion and cook until transparent. Add in carrots and celery. Pour the 1 can coconut milk and let it simmer. If you do not like a lot of soup on this salmon curry, slowly add coconut milk and adjust accordingly. Then , Add in the salmon simmer until salmon is cook through. Add in salt and curry powder. Add the spinach and turn off heat. Serve while hot.
