Ingredients

CHICKEN THIGH MARINADE INGREDIENTS

  • 1/4 cup cilantro, chopped
  • 2 tablespoons freshly squeezed lime juice .juice of 3 limes
  • 1 teaspoon lime zest zest of 3 limes
  • 1 tablespoons chili powder
  • 1 teaspoon cumin
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 lbs boneless chicken thigh

Instructions

  • Place chicken thigh in 1 kilo zip loc, or you can use a big bowl too,
  • Chopped the cilantro in small pieces.
    Using a zester, zest the lime.
    Measure the rest of the ingredients.
  • Add olive oil, cilantro, lime zest, lime juice, cumin, chili powder, salt and pepper.
  • Make sure that the chicken is completely coated with the marinade.
  • Marinate the chicken for 4 hours before grilling. Put the chicken in the fridge.
  • When ready, grill the chicken until inner temperature comes out at 165 F or about 30 minutes in the grill.
  • Brush chicken with oil 15 minutes into grilling, so that it will not dry.
