UBE COOKIE CRINKLES

Ube cookie without Ube Halaya. The Ube Flavor is noticeable. Ube powder is added to add crunch on each bite. It’s perfect for gift giving.

Ingredients

COOKIE BATTER

  • 1/2 cup Ube Powder
  • 1 cup Sugar white granulated
  • 1/4 cup Oil
  • 2 large eggs
  • 11/2 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon Ube flavor I used Mc Cormick
  • 1 1/2 cups Powdered Sugar Use this as a coating of the cookie dough.

Instructions

Ube Cookie Dough

  • Ube Cookie Dough: In a medium-size bowl, add the Ube Halaya powder, sugar, and oil. Mix and add in the egg and the Ube flavor. Mix until incorporated.
  • Sift : All purpose flour, salt, and baking powder and mix until the mixture is well incorporated.
  • Before baking: Cover the cookie dough with plastic wrap and refrigerate for an hour. 
  • Preheat oven: Place the oven rack at the middle of the oven and preheat at 350 F
  • When ready, scoop two tablespoons of the dough and form the cookie dough into a ball. Roll into the Powdered sugar. Place in a cookie pan, with 2 inches distance between each other, and bake for 12 minutes.
  • After baking remove the cookie from the pan and let it cool in the wire rack.

Notes

For frozen dough: Roll the cookie dough in a powdered sugar and bake for 14 minutes instead of 12 minutes. You don't have to thaw the dough before baking.
