One Pot Chicken and Rice
This Pot of Chicken and Rice comes together quickly. It’s cooked in my Instant Pot and it makes for an easy, and delicious dinner that your family will love. This is also cheaper compared to using chicken breast.

Homemade Chicken Dry Rub
- 1 tsp turmeric
- 2 tsps garlic powder
- 2 tsps onion powder
- 2 tsps Montreal Chicken
- 2 tsps Cajun Seasoning
Chicken Ingredients
- 1 medium tomato chopped
- 1/4 cup cilantro chopped
- 1/2 cup onion
- 2 cups jasmine rice
- 3 cups chicken broth
- 4 pieces chicken thigh
Mix all of the rub ingredients together and rub them all over the chicken thighs. I let the chicken sit in the fridge for thirty minutes
Set the Instant pot in a sautee setting. Set the time for thirty minutes and add the oil. Wait for three minutes and add the chicken thighs Let the chicken thighs cook for six minutes on both sides. I often set my timer and use it. If the six minutes is up, turn the to another side and cook fit six minutes. Remove the chicken thigh and transfer it to another plate.
Using the same inner pot, Add the onion and tomato, and cilantro. Let it cook for two minutes and add the rice. Mix the rice coating it with the onion, cilantro, and tomato. Add the chicken broth and level the rice. Add the prepared chicken thighs.
Cover with the pressure cooker lid and set the timer for seven minutes. Set pressure to HI. When done, quick release and enjoy.
