Belgian Waffles without Pearl Sugar

This Belgian Waffles without Pearl Sugar is my copycat version of the Jamba Juice Belgian (liege) waffles. It’s way cheaper, same taste and have I mentioned, you don’t have to use the elusive pearl sugar; we replaced it with pure cane sugar cubes. It’s so easy!

Equipment

  • 1 Waffle maker
  • 1 Stand Up Electric mixed with the paddle attachment
  • Mixing bowl
  • spatula
  • ziploc

Ingredients

  • 2 cups All purpose flour
  • 1 1/2 tbsp brown sugar
  • 1/2 tsp salt
  • 2 tsp Instant Rise Yeast/Quick rise yeast
  • 1 tsp vanilla extract
  • 1/3 cup lukewarm water
  • 1 cup unsalted butter melted
  • 3 large e eggs
  • 1 tsp vanilla extract
  • 1 cup cube sugar pounded

Instructions

  • Measure one cup of the cane sugar cube and put it inside the zip lock. Pound the sugar. Make sure that you pound each cube once so that it will not turn into powder. Set aside.
  • Place the all-purpose flour, instant yeast, brown sugar, and salt in the mixing bowl. Attach the paddle attachment and mix at number two for five turns. Add in the eggs and water. Mix until it forms into a wet dough. Add the melted unsalted butter. Mix until the batter is smooth.  Be patient. We need the batter to be mixed completely. You don’t want the butter to be separated from the flour mixture. This will take seven to ten minutes.
    Cover with a towel or plastic wrap and let it rest for one hour.
  • When the butter and the flour mixture are ready, add in the pounded sugar. Mix using a spatula. Make sure that the sugar is well distributed to the batter.
    Let it rest for another fifteen minutes.
  • When ready, preheat the waffle maker. When the light turns green, spray it non stick oil. Scoop one third cup of the batter and place in the middle of the waffle maker. Close it tightly and wait for three minutes. When the waffles are brown on top, it is done. For the next scoops, you don’t need to spray with nonstick oil.

Notes

This recipe was adapted from Stay at Home Belgian Waffles. I did not have the pearl sugar, so I used cane sugar but it was just as good as the one from Costco and Jamba juice.
