Ingredients

Butternut Squash Soup Ingredients

  • 1 Medium Butternut Squash
  • 6 cups water
  • 1 cube Beef Bouillon
  • 2 cloves Minced Garlic
  • 1/2 inch Crushed Fresh Ginger
  • 1/4 cup Chopped Onion
  • 1/4 tsp Ground Cinnamon
  • 1/4 tsp Turmeric
  • 1/2 tsp Nutmeg
  • 1/4 tsp Clove
  • Salt and Pepper to taste

Garlic Bread Ingredients

  • 1 loaf Bread
  • 1/4 cup Unsalted Butter
  • 2 tsp Garlic Powder
  • Salt to taste
  • 2 tbsp Fresh Parsley,optiona

Optional Ingredients

  • 1 tbsp Everything Bagel
  • 1/2 cup Parmesan Cheese or your favorite cheese

Instructions

Roast the Butternut Squash

  • Cut the butternut squash in half and remove the seeds. Spray the squash with nonstick spray and arrange them in the air fryer basket. I sliced the squash into four pieces for them to fit in the basket.
  • Insert the basket and push the roast setting and set the timer to forty-five minutes. Cook the butternut squash until it is fork tender.
  • When done, let the squash cool down and peel.

Cook the Soup

  • In a large pot, heat the avocado oil over medium heat. Add the onion, garlic, and ginger. Sauté until softened, about 5 minutes.
  • Add the butternut squash water. Bring to a boil, then reduce heat and let simmer for about 10 minutes or until the squash is tender.
  • Using an immersion blender (or transferring to a blender in batches), blend the soup until smooth and creamy.
  • Stir in the heavy cream and let it simmer for another 5 minutes.Taste and adjust seasonings as needed. Serve warm with a drizzle of Cream on top.

How to Make the Garlic Bread

  • Preheat the oven to 375°F (190°C), or use an air fryer. Remove the paper wrapper of the garlic. Cut the stem end sprinkle with olive oil, and wrap it with a tin foil.
  • Put the garlic in the air fryer basket. Push the roast setting and set the timer to 45 minutes
  • When done, let the garlic cool down and transfer to a bowl. Add the butter and season with salt and garlic powder. Add the fresh parsley too if using.

Broil the garlic bread in the air fryer or in the oven

  • Air Fryer: Spread the garlic butter to the bread. Line the prepared bread in the air fryer basket. Insert the basket and push the broil setting. Set the temperature to 400 F and broil the bread for two minutes or until the butter is bubbly.
    Oven: Preheat the oven to 375 F. Place the bread in a baking sheet and broil the bread for one to two minutes.
    In both processes, always pay attention that the bread doesn't get burned.
