Equipment

Ingredients

  • 1 can Garbanzo Beans,15.5 oz
  • 1 can Black Beans, 15 0z
  • 1 piece Fresh Cucumber
  • 4 oz Feta Cheese half of block
  • 2 tbsp Finely Chop Fresh Oregano

Salad Dressing

  • 1 Juice of One lemon
  • 1/4 cup Olive Oil
  • Mustard, Honey, Apple Cider Vinegar

Instructions

  • Drain the garbanzo bean liquid in a strainer, wash the beans, and drain the liquid thoroughly. Transfer to a large bowl. Do the same to the black beans. Chop the onion and add to the bowl. Cut the cucumber into cubes and add to the bowl. Crumble the Feta cheese and add it on top. Add the chopped Oregano.

Make the Dressing

  • Place the olive oil and lemon juice in the container. Add honey, mustard, and apple cider vinegar. I did not share the quantity of these ingredients because I want you to season this dressing according to your liking.
  • Mix until smooth. Pour the dressing into the bowl and gently mix the ingredients.
