INASAL CHICKEN

FILIPINO CHICKEN BARBECUE soak in lemon grass,ginger,garlic and onion marinade,this comes close in taste with the FILIPINO MANG INASAL

Ingredients
  

  • 4 lbs quartered chicken

MARINADE INGREDIENTS:

  • 3 sticks lemon grass chopped
  • 1/4 cup ginger chopped
  • 1 head garlic chopped
  • 1/4 cup onion chopped
  • 1/4 cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1/2 cup water
  • 1/4 cup vinegar
  • 1/2 cup soy sauce
  • ANNATO SEED OIL
  • 1 cup oil
  • 3 tablespoon Annato seeds

Instructions
 

  • MIX ALL OF THE MARINADE INGREDIENTS until sugar, salt are dissolve. Adjust measurements according to your liking.
  • Place the chicken in a large zip loc and add the marinade.
  • Marinate chicken overnight.

WHEN CHICKEN IS READY:

  • Boil the chicken using the marinade. Boil chicken covered for about an hour in a low heat. Drain excess liquid and let chicken cool down. Brush chicken with the annato oil and grill to smoke chicken.

FOR THE ANNATO OIL:

  • Heal oil in a sauce pan and add in the annato seed. Mix until orange color is infused in the oil.
  • Let the oil cool down and transfer into a container. Store in a room temperature.
