Ube Butter Mochi
Soft, chewy, buttery, and packed with the delicious flavor of ube, this Ube Butter Mochi is an easy Filipino-inspired dessert made with glutinous rice flour, ube, coconut milk, and butter. It has crisp golden edges, a wonderfully chewy center, and a beautiful purple color that makes it perfect for parties, holidays, and everyday snacking.

Nonstick Cooking Spray
- 2 cups Mochiko
- 3/4 cups White Granulated Sugar
- 1/2 tsp Salt
- 1 tsp Baking Powder
Wet Ingredients
- 2 large Eggs
- 1/2 cup Ube Halaya
- 1 cup Coconut Milk
- 1/2 cup Evaporated Milk
- 6 tbsp Melted Unsalted Butter
- 2 tsp Ube Flavoring
- 1/2 tsp Vanilla Extract
Preheat oven at 350 F.
Place the dry ingredients in a large bowl. Mix using wire whisk. Set it aside.
Place the wet ingredients in a large bowl. Mix using a wire whisk or spatula. Ensure that there are no lumps of the Ube Halaya. Add wet mixture to the dry ingredients.
Line an 8-by-8 inch pan with parchment paper and spray with nonstick oil. Pour the prepared mixture and bake for 35 minutes in a preheated oven.
Let cool and slice. Enjoy!
