- 5 large eggs
- 1 large tomato
- 1 tsp Onion powder
- 1 tsp Garlic Powder
- 1/4 tsp Ground White or Black Pepper
- 1/4 tsp Salt
- 1 stalk Green onion,optional
Wash the tomato to remove the soil or gunk. Pst it dry and cut the tomato into wedges. Set it aside.
Crack the eggs in a large bowl and season with salt, pepper, onion, and garlic powder. Season the egg according to your liking.
Melt olive oil or butter in a pan and cook the egg. Remove the egg from the pan, and using the same pan, saute the tomato until soft. Add the green onion, if using, and the cooked egg into the pan. Gently mix the egg and tomato. REmov from the pan and serve with rice. Garnish with green onion.
