Equipment

Ingredients

Fof Potato Skins

  • 4 pieces  medium russet potatoes
  • 2 tbsp  olive oil
  • salt and pepper

For the Filling

  • Cooked Potato flesh
  • 1/4 cup Sour cream
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • salt and pepper taste
  • chopped bacon or pepperoni
  • 1/2 cup Shredded Mozzarella Cheese

Instructions

Prepare the Potatoes

  • Wash the potatoes to remove the soil or gunk. Dry the potatoes with a washcloth and brush them with oil. Drench with enough salt and pepper. Bake the potatoes in a 350 F preheated for 45 minutes or until tender when you poke them with a fork.  Let the potatoes cool down

Scoop and Season

  • Once cooled, slice each potato in half lengthwise. Using a spoon, carefully scoop out most of the flesh, leaving about ¼ inches around the skin to maintain structure. Don’t discard the flesh since we will use that for the filling.
  • Brush the insides of the skins with olive oil.
  • Preheat the oven to 400 F. Place the prepared skins on a baking sheet and cut side up. Bake for 10-15 minutes until crispy and golden brown. Remove from the oven and set aside. 

Prepare the filling

  • Place the flesh in a medium-sized bowl. Add the onion powder, garlic powder, and sour cream mix.
  • Fill the potato skins with the prepared filling. Top with shredded mozzarella cheese, pepperoni, or bacon.
  • Return the filled skins to the oven and broil for another 5-7 minutes until the cheese is melted.
