Fof Potato Skins
- 4 pieces medium russet potatoes
- 2 tbsp olive oil
- salt and pepper
For the Filling
- Cooked Potato flesh
- 1/4 cup Sour cream
- 2 tsp Onion Powder
- 2 tsp Garlic Powder
- salt and pepper taste
- chopped bacon or pepperoni
- 1/2 cup Shredded Mozzarella Cheese
Scoop and Season
Once cooled, slice each potato in half lengthwise. Using a spoon, carefully scoop out most of the flesh, leaving about ¼ inches around the skin to maintain structure. Don’t discard the flesh since we will use that for the filling.
Brush the insides of the skins with olive oil.
Preheat the oven to 400 F. Place the prepared skins on a baking sheet and cut side up. Bake for 10-15 minutes until crispy and golden brown. Remove from the oven and set aside.
Prepare the filling
Place the flesh in a medium-sized bowl. Add the onion powder, garlic powder, and sour cream mix.
Fill the potato skins with the prepared filling. Top with shredded mozzarella cheese, pepperoni, or bacon.
Return the filled skins to the oven and broil for another 5-7 minutes until the cheese is melted.
