Prepare the Potatoes
- Wash the potato to remove the soil or gunk.
- Dry the potatoes with a wash-cloth and brush them with oil
- Drench with enough salt and pepper.
- Preheat the oven to 350. Bake for 45 minutes or until tender when you poke them with a fork.
Scoop and Season
- Cut and Scoop: Once cooled, slice each potato in half lengthwise. Using a spoon, carefully scoop out most of the flesh, leaving about ¼ inches around the skin to maintain structure. Don’t discard the flesh since we will use that for the filling.
- Brush with Oil: Brush the insides of the skins with olive oil and season with salt and pepper. For an extra flavor kick, sprinkle in some garlic powder and paprika.
Bake the Skins
- Preheat the oven to 450 F. Place the prepared skins on a baking sheet and cut side up. Bake for 10-15 minutes until crispy and golden brown. Remove from the oven and set aside.
