Peanut Kisses Recipe

This Peanut Kisses Recipe is the only peanut kisses you need. It tastes similar to the one we have in Bohol Philippines. Make this and make sure to share with you friends and Kabayan.

Equipment

  • 1 Stand Up Mixer with Bowl or Hand Electric Mixer
  • 1 Parchment Paper or Nonstick Baking Sheet Liner
  • baking sheet

Ingredients

  • 2 large Egg Whites
  • 1/4 cup White Granulated Sugar
  • 1/8 tsp Salt
  • 1/8 tsp Cream of Tartar
  • 150 grams Toasted Peanuts non salted
  • 2 tbsp Corn Starch

Instructions

  • Preheat oven to 280 F. Line your baking sheet with parchment paper or nonstick baking sheet liners
  • Ground the peanuts. You can use electric grinder or place the peanut in a Ziploc and pound with rolling pin. Make sure that you don't ground the peanuts too much; you want to keep big chunk of peanuts. Add in the corn starch and coat the peanuts with it. Set it aside.
  • Place the egg whites into a large bowl and mix the egg whites using a hand mixer or a stand-up mixer. Mix on medium speed for one minute until frothy. Add the cream of tartar and salt. Mix on high speed for two minutes and add the granulated sugar at three intervals. Mix for two minutes in every addition.
  • Mix on high speed after adding the sugar and mix until soft peaks. Please watch the picture. You can check this by pulling the mixer whisk up and if it looks like the photo above, it is done.
  • When done, add the ground peanuts. Add the peanuts slowly, gently mixing on each addition, making sure that the peanuts are incorporated to the egg whites. It is important to be gentle in mixing because you want to keep air bubbles of the meringue.
  • Transfer the mixture to a piping bag and pipe the meringue to form into kisses.
  • Bake in a preheated oven for 40 minutes. Turn off the oven and leave the kisses in the oven for two hours without opening.
