Easy Sweet Potato Pie Recipe

This Easy Sweet Potato Pie Recipe will yield a gently sweet and firm filling. The filling is  not runny nor soggy and it freezes well too. It is not too sweet, and really delicious. This is a keeper.

Ingredients

  • 1 lb sweet potato
  • 1/2 cup butter melted
  • 1 cup white sugar
  • 1/2 cup milk
  • 2 eggs
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoons cloves
  • 1 teaspoon vanilla extract
  • 1 piece 9 inch frozen pie crust thawed

Instructions

  • Poke sweet potato with fork and wrap with foil.
  • Bake in a preheated 350 F  oven for an hour, or until it is soft. Check tenderness with fork. When the fork slides into the potato easily, it is ready.
  • Peel the cooked baked potatoes put in a large bowl. Using a masher, mash potato until very fine.
  • Add the rest of the ingredients and mix until ingredients are well incorporated.
  • Transfer mixture in a ready made thawed pie  crust and bake for 50 minutes. Us the toothpick test.

Notes

Start checking pie at 45 minutes using the toothpick test (or chopstick test). When it comes out clean, it is done.
