PUMPKIN PANCAKE EASY RECIPE

This PUMPKIN PANCAKE EASY RECIPE is soon to be on your menu rotation soon. It's easy to make, it requires easy ingredients and it's filled with pumpkin flavor. Now, make your pumpkin pancake from scratch.

Ingredients

WET INGREDIENTS:

  • 1 ½ cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar

DRY INGREDIENTS:

  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt

Instructions
 

  • In a small bowl, mix together dry ingredients until incorporated. Set aside.
  • In a separate bowl, mix  egg and sugar until pale in color add in pumpkin puree' . Add the milk, oil and vinegar. Add the flour mixture and mix until free from lumps. Don't overmix. You can just use spatula when mixing.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 3/4 cup for each pancake. Brown on both sides and serve hot.

Notes

This pumpkin pancake batter needs to be thick to keep the pumpkin spice taste intact, so don't thin the mixture by adding water.
