BUFFALO CHICKEN BITES

Servings 30 pieces of buffalo Chicken Bites

Ingredients
  

  • Dough:
  • 2 1/4 cup all purpose flour
  • 2 1/4 teaspoon fast rising yeast
  • 2 tablespoon unsalted butter melted and cooled
  • 1 tablespoon brown sugar
  • 1/4 teaspoon salt
  • 1 cup warm milk
  • 1 egg scrambled ( you will have some left over scrambled egg - it is your choice to have this part or not but if you skip this, you will not get that pretty golden brown look on your Chicken Bites)
  • Filling:
  • 1 1/2 cup finely diced cooked chicken breast see notes below
  • 1/2 cup crumbled blue cheese
  • 2 tablespoons shredded cheddar cheese
  • 1/4 cup hot sauce I used the Louisiana Hot sauce
  • 4 tablespoons unsalted butter melted and cooled
  • FOR THIS RECIPE WE USED A TOTAL OF 6 TABLESPOON UNSALTED BUTTER : 2 TBS FOR THE DOUGH AND 4 TBS FOR THE FILLING

Instructions
 

  • Filling:
  • Mix all the filling ingredients in a non metallic bowl. Set aside for later.
  • Dough:
  • Place the flour, yeast and salt in the stand up mixer bowl. And whisk to completely incorporate.
  • Place the milk and sugar in microwavable cup and mix dissolve the sugar. When the sugar is dissolve heat it for 1 minute in the microwave.
  • Make a well in the flour and pour in the milk mixture and mix to form a soft dough.
  • When the dough is smooth and soft, place it in grease bowl and cover with plastic and place a warm place ( please see notes below) and let the dough rise for an hour
  • Line 2 baking sheets with a parchment paper and set aside.
  • Slightly grease your flat surface with oil
  • Preheat over at 350 F
  • Divide the risen dough into 4 separate balls.
  • Flatten it into a rectangle as shown above and line it with the filling
  • Seal as shown above.
  • Brush the dough with scramble egg, and cut into 1 1/2 length size and place it on the prepared baking sheet.
  • Do the same of the remaining dough.
  • Bake in a pre heated oven for 15 minutes or until the top of the Buffalo Chicken Bites are golden brown

Notes

I use fast rise yeast the one where you do not dissolve in water Tips to make the dough rise: Heat oven to at 220 F for 1 minute then turn off. This will become the warm place where I let my dough rise. Place the dough there for one hour
HOW TO COOK THE SKINLESS CHICKEN BREAST
Put 1 large chicken breast in a saucepan and cover it with water. Add a pinch of salt and boil until cook through. When the chicken breast is cook, let it cool and shred and chop into small pieces.
