How to Make Filipino Ice Candy – Mango, Ube & Buko Pandan Flavors

Equipment

  • 12 Small Plastic Bags
  • 1 Pitcher
  • 1 Deep Laddle
  • 1 funnel

Ingredients

For the Base (makes 10-12 sticks):

  • 1 can Evaporated milk 12 oz
  • 1/2 can Condensed milk1 1/2 cups cold waterPinch of salt 7 oz
  • 1 1/2 cups Cold water
  • Pinch of salt

Mango Ice Candy

  • 1 cup Ripe mango puree (fresh or frozen)
  • 1/2 cup Optional: diced mango bits

Ube Ice Candy

Buko Pandan Ice Candy

  • 1/2 cup Shredded young coconut (buko)
  • 1/2 cup Pandan gelatin cubes (optional but delicious) Please see noted for the recipe link
  • 1/2 tsp Pandan extract

Instructions

  • Mix your base – In a large pitcher or bowl, whisk evaporated milk, condensed milk, water, and salt.
  • Add your flavor – Stir in your chosen flavor mix until smooth. Taste and adjust sweetness if needed.
  • Fill the plastic ice candy bags – Use a funnel to fill each bag about 3/4 full.
  • Seal tightly – Twist and tie each bag securely.
  • Freeze overnight – Place in the freezer and freeze for at least 6–8 hours or overnight.
