Equipment

  • 1 medium-sized bowl

Ingredients

  • 1 lb Ground Chicken
  • 1/3 cup Almond Flour You can replace it with Italian Bread Crumbs
  • 1 tbsp Plain Yogurt
  • 1/4 cup Chopped Red Onions
  • 2 tsp Italian Seasoning
  • 1 tbsp Homemade Chicken Seasoning
  • 1 tbsp Olive oil

Instructions

  • Place ground chicken in a large bowl. Add the rest of the ingredients and mix well.
  • Shape the chicken mixture into a one-inch ball.

Cook the Meatballs

  • Stovetop Method: Heat olive oil in a large skillet over medium heat. Add meatballs in a single layer and cook for 5-7 minutes per side until golden brown and fully cooked (internal temperature of 165°F/75°C).
  • Oven Method: Spray baking sheet with nonstick oil. Line the meatballs half-inch apart. Preheat oven to 350°F and bake meatballs on a for 8-12 minutes.

How to Store

  • Spray the baking sheet with a nonstick oil. Shape the meatballs to one-inch ball sizes and line them on a baking sheet. Freeze. When they are frozen, remove them and store them in a ziplock.
