Hi,guys! The meal I am sharing with you today, is a BUDGET MEAL FOR 4 . this is actually my second post on budget meals which I planned for my daughter’s dorm room recipe, and also to keep my sanity. Plus saving me so much money and time. What I love about this sauce recipe, is that it is healthy. It is filled with carrots, bell pepper and I used lean chicken breast for its protein. Of course, you can use ground turkey, ground beef or ground pork with this. Whatever you prefer. I have used this sauce recipe so many times one example is this Bubble Pizza which a family favorite.It is always in my menu rotation, and I always make a huge batch of this sauce to freeze. You can freeze this for months, and it never stale. You can slow cooked this too.
Lately, I have been watching You Tube and getting some ideas on meal prepping and saving, and I tell you, I saved so much money this month, by following their meal prepping and budget ideas. I am so glad I am becoming intentional about our food budget because I can’t believe we spent so much money on food that are even unhealthy, so I made this sauce recipe.
SAUCE RECIPE INGREDIENTS:
- carrots
- bell pepper
- ground meat of your choice
- tomato sauce
- garlic
- onion
Eggplant Boats
Stuffed Pepper
Spaghetti
Ingredients
- BASE SAUCE :
- 5 cloves garlic chopped
- 5 medium sized carrots chopped
- 1 small onion chopped
- 2 pieces dried basil leaves
- 2 tablespoon canola oil
- 2 tablespoon brown sugar
- 2 lbs lean ground beef
- 1 can 14.5 oz Diced Basil Oregano and Garlic
- 1 can 15 oz tomato sauce in any brand
- 1 can 8 oz tomato sauce
- Velveeta Cheddar cheese to garnish optional
- Handful of Basil Leaves for garnish optional
Instructions
- BASE SAUCE INSTRUCTION:
- In a large cooking pan, heat the oil.Add in the ground beef and let it cook until it is not pink or it is cook through.Let it simmer for 2 minutes and add in the sauces and the can of DICED Basil, Oregano, Garlic.Let the sauce mixture simmer for 15 more minutes.Add in chopped onion, garlic and carrot and simmer for 5 minutes.
- TO ASSEMBLE THE BUBBLE PIZZA:
- You need about 2- 3 cups of the sauce and 1 tube of ready made Original Flavor Biscuit
- Open the tube and separate the biscuits. Line them in a baking dish and top it with half of the high protein sauce and freeze the leftover for next use. Do not fill the pan with the sauce because the biscuit will expand and you do not want sauces spilling . Add in the Velveeta cheese if using, and bake until the pizza is expanded. Around 40 to 45 minutes.
- FOR THE PASTA:
- You need about 2- 3 cups of the sauce.
- Cook spaghetti noodles per box instruction, and add in the sauce on top.
- FOR THE STUFF PEPPER:
- Slice pepper in vertically in the middle. Arrange sliced pepper in a baking pan and add about 2 cups of water and bake for 30 minutes.The idea is to soften the pepper.
- Prepare about 2 cups cook rice and add in the sauce into the rice. Coat the rice well. Stuff the pepper with rice, top pepper with Parmesan cheese and bake for 45 minutes.
- EGGPLANT BOATS:
- You need about 2- 3 cups of the sauce.
- Slice egg plant in vertically in the middle.Using a spoon, remove the eggplant meat and chop into smaller pieces. Saute' eggplant meat until soft and let cool. Prepare about 2 cups cook rice and add in the sauce into the rice and the cooked eggplant. Coat the rice well with the sauce. Stuff the eggplant boats with rice, and bake for 45 minutes or until eggplant is soft.Top with Parmesan cheese
