This Palitaw recipe is a must try. It is simple to make. I believe you can make it too.
Palitaw is a chewy rice cake rolled into a freshly grated coconut,toasted sesame seeds and sugar. This is a favorite Filipino dessert.
It occurred to me that this will be a good Saturday. The sun is out and we actually have a better temperature today – 89 F; way better than the 98 F yesterday. Although this would be a perfect time to go out and soak under the sun and relax near the river, I opted to make ice cream and this Palitaw for the blog. So I just stayed in the house with my cute sleepers and my pajamas
…and prepare all the Palitaw ingredients; and really, there weren’t much.
Just sesame seeds, glutinous rice flour and sugar.
So simple.
And I have to talk about this shredder.
I got it from the Asian store in Kansas. Unfortunately, you have to use a fresh shredded coconut to have a tasty Palitaw. Also, you have to toast the sesame seeds to give the Palitaw a nutty flavor. I tried a pre- bought toasted sesame seeds, but it was not at par with the freshly toasted seeds, so I just do it myself. All you have to do is just heat a frying pan and toast the sesame seeds until they are “flying” all over. LOL
Palitaw or float in English is a famous dessert/snacks in the Philippines. This snacks got its name because when you prepare it, you just have to submerge the Palitaw mixture into the boiling water and when it floats, it is done. After that, you will have to drain the Palitaw and roll it in the shredded coconut and sprinkle it with the sesame seed and sugar mix.
Although I had made this Palitaw several times, for some reason today, I have trouble perfecting the Palitaw mixture. It came out too wet and it had trouble sticking together. When that happens to you, just start with 1 1/4 cup of glutinous rice and 3/4 cup of water. If it is still soggy, add glutinous rice sparingly… maybe 1 teaspoons at a time until you will be able to handle the mixture. It also help if you coat your hand with glutinous rice flour upon handling the mixture.

HOW TO MAKE PALITAW
Ingredients
- 1 to 1 1/4 cup Glutinous rice flour
- 1/8 to 1/4 cup toasted Sesame seeds
- 1/4 cup white sugar
- 3/4 cup water
- 1 cup freshly shredded coconut
Instructions
- Mix the glutinous rice flour and water in a mixing bowl.
- Mix by hand until you are able to easily make a dough. If the mixture is too wet, add glutinous flour 1 teaspoon at a time until you can form a ball and you can flatten it with your hand without sticking.
- Form all the mixture into ball and flatten with both palm.
- Boil 6 cups of water. When the water is boiling, drop the flattened mixture and wait when it floats,
- When the mixture floats, remove it with a slotted spoon. Let the water drain and roll the Palitaw to the shredded coconut.
- When ready to serve, sprinkle the Palitaw with the sugar mixture.
- Serve the Palitaw while it is still warm.
COATING:
- Mix sesame seeds and sugar.
