DATU PUTI SPICED VINEGAR COPY CAT. DATU PUTI SPICED is a famous Filipino sauce which is easily accessible in the Philippines, but unfortunately hard to find here in the USA; so I made my own copy cat version using the vinegar I can find in my supermarket. To make this Datu Puti Spiced sauce copy cat, you need any type of white vinegar and lots of spices: garlic, onion and red chilis – lots of them too.
Yup, there should be lots of chilis…. as you know, I get loco and gaga about spicy food, just like this Bicol Express Recipe, so if my container can fit a truck of chili in this Datu Puti Spice Vinegar Copy Cat, I would add it in a whim… that’s how I love spice…
Another thing here to note: YOU DON’T NEED A FANCY BOTTLE to make this Datu Puti Spice Vinegar Copy Cat. You can use any container that you may have at home.

It is too easy, as you can see in the recipe list. You just put the spices in the container, preserve the mixture for 2 weeks and you are good to go. Enjoy it and try to dip you Broiled Mackerel or Lechon Kawali in it too.
Ingredients
- 2 cups white vinegar
- 1/2 cup white or red onion finely chopped
- 1 head garlic separated and added whole
- 10 pieces of red or green chilis
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Pour in the vinegar into the container and add in the remaining ingredients. Preserve the mixture for 2 weeks before use.

You can use red or green onion and for the chili, it has to be Thai Chili.

One small thing missing. The chilli needs to be blanched first to remove that waxy coating.
