I have my leftover ham frozen for 4 months now, I am afraid that it will stale, so I have been cooking Ham fried rice for 3 days in a row now.
Personally, I am not a big fan of ham eaten with the glaze on top, but there are so many possibilities of its leftover. I have made the ham soup in the slow cooker and I added chopped ham in my veggies. You can also add ham in you Siopao Filling, Empanada Filling or ham can be the meat you use for any egg omelettes you will make. It’s an endless possibilities with leftover ham.
But I always lean for Ham Fried Rice whenever I have leftover ham.
Because we just love it.
Leftover Ham Fried Rice with Mixed Frozen Vegetables Blend Ingredients:
Rice : This is after a fried rice, so this the main ingredient. We prefer a day old rice since doing so will yield a non soggy fried rice.
Ham: You can use any brand of ham. I stored and froze the leftover ham last Christmas, and I’ve made soup and pizza from it.
Onion: Add as much as you want. I love onion, so I add more to add more taste.
Salt: Season according to your liking.
Frozen Vegetable blend: You can thaw it, or you can add it frozen. Make sure that you keep on cooking until the ice is thawed and the veggies are cooked through before adding the rice.
Edamame: Same with veggies, you can cook it thaw or frozen. Make sure that you keep on cooking until the ice is thawed and the veggies are cooked through before adding the rice.
Leftover Ham Fried Rice with Mixed Frozen Vegetables Blend
Ingredients
- 2 cups cooked rice
- red onion
- 1 cup mixed frozen vegetables
- 1 cup Edamame
- salt
- 2 tablespoons oil
Instructions
- Heat oil in a big pan. Add garlic and cook until gently brown. Add the onion and cook until transparent.
- Add the ham and cook for 3 minutes. Add the frozen veggies and edamame. Cook for 3 more minutes.
- Add the cooked rice and season with salt. You can add soy sauce too if you like.
- Serve hot.
