⁴Easy, delicious and cheap 1 ROASTED CHICKEN DONE 4 WAYS that you can meal prep for this week. You can either buy your Roasted Chicken in Costco, or you can prepare it yourself. Whichever you decide, you are up to a delicious meals that do not break your budget.
TIME TO BUDGET AGAIN, TUITION PAYMENT IS RIGHT AROUND THE CORNER
Hey, guys! It’s time for me to hype up and put a full force on my budgeting this month, since the daughter is about to go back to college – tuition fees are getting closer. It is saving time, my friend; so comes in this ROASTED CHICKEN DONE in 4 WAYS meal prepping, cheap meal options. I promise that it is very easy to prepare and when they are healthy meals too. And to make my life easier, I just purchased a pre cooked chicken in Costco. From that, I made Chicken Enchilada, Filipino Style Chicken soup, Chicken Pot Pie and Filipino Style Macaroni Salad .

SO HOW DO I PREPARE THIS CHICKEN MEALS?
Normally, I just buy a pre cooked chicken and divide them into different portions. Then I prepare the meals ahead of time, and refrigerate it. My daughter’s fav among this meal is the Filipino Style Chicken soup, mine is the Filipino Style Macaroni Salad, my son’s is the chicken pot pie. I like the Chicken Enchilada too for pack lunches. I find that preparing this meal has saved me so much money for the week.
SO LET’S TALK ABOUT THESE MEALS
As what I mentioned above, Filipino Style Macaroni is my most fav among this meal. It is usually serve during parties and always staple on every potluck. But the weirdest thing is I have not eaten this Filipino Style Macaroni for 19 years. Weird. So when a friend prepared it when she got a gathering, I was inspired to make it and add it on my meal preparation, so here we it is.
And for the soup: FILIPINO STYLE SOUP. This is my staple soup when I am in a hurry. This do not take 15 minutes to prepare and it is an easy base for my veggie. I add a lot of leafy greens in there, and this is one among the only ways my family will eat vegetables, so this soup is a must have at home.
CHICKEN ENCHILADA WITH GREEN ENCHILADA SAUCE – this is the easiest Enchilada on earth. It is made only of 3 ingredients and there is no fancy taste, just simple deliciousness.
CHICKEN POT PIE – again, simple and tasty. usually I just make a batch of this Chicken Pot Pie and the rest of it makes it to our lunch box the next day. I opted to use a refrigerated pie crust to lessen the stress.
ROASTED CHICKEN DONE 4 WAYS
Ingredients
- CHICKEN VEGGIE SOUP
- 1/2 of large red tomato chopped
- 1/4 cup red onion chopped
- 1 chicken bouillon
- 1-2 cups roasted chicken
- BONES OF THE PRE COOKED CHICKEN
- 1 cup or more, green vegetables ( i used spinach or mixed veggies)
- 5-6 cups water or you can use chicken stock
- CHICKEN POT PIE
- 2 1/2 cup frozen veggies
- 1/3 cup flour
- 1/2 cup milk
- 1 cup chicken broth or water
- 1- 2 cups roasted chicken
- 2 pieces refrigerated pie crust
- CHICKEN ENCHILADA
- 2 cups roasted chicken
- Mexican Blend Cheese
- 1 can 1 lb Green Enchilada Sauce
- 1 can black beans drained
- FILIPINO STYLE MACARONI SALAD
- 2 1/2 cups roasted chicken shredded
- 2 cups macaroni pasta cooked per instruction
- 1 20 oz can pineapple chunks ( cut into half)
- ¼ cup sweetened condensed milk
- ¾ cup raisins
- 1 ½ cup mayonnaise
- ¾ cup shredded carrots or cubed
- ¾ cup shredded cheddar cheese
- 1 teaspoon salt
Instructions
- CHICKEN VEGGIE SOUP
- In a medium sized stock pan, boil the chicken bones and add in the bouillon.
- When ready, remove the bones and add the tomato, onion and chicken.Let boil and season with salt and pepper. When boiling, add the veggies and turn off heat. Serve hot
- CHICKEN POT PIE
- Heat oven to 425°F. Prepare pie crusts as directed on box for Two-Crust Pie using 9-inch glass pie pan.
- Heat oil in a pan and add onion; cook 2 minutes, stirring frequently, until tender. Stir in flour, salt and pepper until well blended. Gradually stir in broth and let simmer until thickened. Add the veggies and the chicken .Remove from heat and spoon mixture into a pie pan lined with the crust. Cover mixture with the other crust and Bake 30 to 40 minutes or until crust is golden brown. Let stand 5 minutes before serving.
- CHICKEN ENCHILADA
- Spread 1/2 cup of the enchilada sauce evenly in baking dish. Spread 1/2 cup of shredded chicken on the middle of the flour tortilla and add beans. sprinkle with 1 tablespoon cheese and l Wrap tortillas tightly around filling, placing seam side down in baking dish. Top with remaining enchilada sauce. Sprinkle with remaining cheese and bake for 20 to 25 minutes, or until cheese is melted.
- FILIPINO STYLE MACARONI SALAD
- Cook macaroni per package instruction and let cool. Pour macaroni in a large bowl and add in the rest of the ingredients. Mix to coat the macaroni with mayo and condensed milk.
- Refrigerate before serving.
