BONELESS CHICKEN THIGH IN LIME CILANTRO MARINADE
I love saving money. I know, I am a weirdo, but really, I like to see my pocket have extra cash to spare due to sales. And this chicken thigh just save me $ 5 .00 this week. I saw it in the chicken section and snagged a bag or 2.
The problem is what to do with the chicken thighs when you have a lot of them?
You can slow cook it, grill it, instant pot it, air fry it, bake it- so many chicken thigh possibilities; but today, I opt to marinate it in cilantro and lime marinade and grill it outside. Luckily we have a spot of hot weather in Central Oregon and I grabbed that opportunity to do some grilling.
I know white meat is healthier and all that, but I am partial to red meat because it always comes out so tasty.
This grilled chicken thigh is so juicy and moist. I serve it with cilantro rice and had a sip of beer to make the ambiance similar to eating out—- btw, eating out is out of the picture too, since we are budgeting, remember?
If you ever wonder why I am trying to budget too much, it’s because we are trying to pay off our house in six years instead of 15 years. This is a stretch though because I/we don’t really want to work extra hours to earn some money. And I found that budgeting and spending less on food gives us extra cash to add to our mortgage. Thus all these cheap meals on the blog like this chicken recipe, meal prepping, and this quick meals.
I have been doing a lot of freezer and pantry challenges too… Yup, it takes a lot of creativity.
And, I just found that chicken is really cheap and they are always on sale in our store.
SO LET’S DOT THIS!
INGREDIENTS FOR CHICKEN MARINADE:
These ingredients are very simple and easy to find. Chances are you have them already in your fridge or pantry. You can mix them in a bowl or you can add them directly in a ziplock.
- Cilantro – you can add more if you want. Usually, you can use the whole bunch and chop it in small pieces.
- Lime- in this recipe, we used 3 limes and it yielded 2 tablespoons of juice.
- Lemon zest- use a zester to get the lime zest. Just make sure that you zest the green part of the lime skin only. Zesting the white skin will make the marinade bitter.
- Olive oil
- Spices- cumin and chili powder.
- Salt and pepper to taste.
PREPARE THE CHICKEN FOR GRILLING
- Place 4-5 pieces of chicken thigh
- In a small bowl add in the marinade ingredients and season accordingly.
- Pour into the chicken and seal the zip lock.
- Let sit in the fridge for 4 hours before grilling.
HOW TO GRILL CHICKEN THIGH
When the chicken thigh is ready, grill the chicken until the meat temperature reaches 165 F. About 35 minutes of grilling.
HOW TO COOK CHICKEN THIGH IN THE OVEN
- Place oven rack in the middle part of the oven.
- Preheat oven at 350 F and line the baking pan with tin foil.
- Bake the chicken until the meat thermometer come out at 165 F. About 35 minutes.
- Brush chicken with oil 15 minutes into grilling, so that it will not dry.
HOW LONG TO COOK CHICKEN THIGH
When grilling, or baking boneless chicken, you have to use a meat thermometer and the meat should be at 165 F . This is about 30 minutes of grilling or baking.
WHERE TO CHECK THE MEAT THERMOMETER
Poke the meat thermometer in the thickest part of the thigh.
HOW TO SERVE
For me, I usually serve it with rice and veggies that I grilled the chicken with- zucchini, corn, asparagus will be good for it too.

CHICKEN THIGH MARINADE INGREDIENTS
- 1/4 cup cilantro, chopped
- 2 tablespoons freshly squeezed lime juice .juice of 3 limes
- 1 teaspoon lime zest zest of 3 limes
- 1 tablespoons chili powder
- 1 teaspoon cumin
- 2 teaspoons salt
- 2 teaspoons pepper
- 2 lbs boneless chicken thigh
Instructions
- Place chicken thigh in 1 kilo zip loc, or you can use a big bowl too,
- Chopped the cilantro in small pieces. Using a zester, zest the lime. Measure the rest of the ingredients.
- Add olive oil, cilantro, lime zest, lime juice, cumin, chili powder, salt and pepper.
- Make sure that the chicken is completely coated with the marinade.
- Marinate the chicken for 4 hours before grilling. Put the chicken in the fridge.
- When ready, grill the chicken until inner temperature comes out at 165 F or about 30 minutes in the grill.
- Brush chicken with oil 15 minutes into grilling, so that it will not dry.
