It is yummy!” that is what my son said when he ate this. And he is right. The whole clan loved this meal and I cannot help but convince you to try this. We all raved about it and I after it ran out, I was thinking about its flavor when I was at work and when I was at the gym..just like a crazy person. Talk about falling in love with food,huh. So I made it again for the 4th time since I made it 2 days ago. If you do the math, that is a lot of sweet potatoes and beef in our belly…
If you have raised kids, you will understand this: That when the kids grow up, your presence as a mom will somehow feels like you have become irrelevant . And this is my case right now. My hugs and kisses in public are an embarrassment and little subtle questions is a form of intrusion. Gone are the days when the kids wear the clothes I chose for them and sweet praises of adoration bring them excitement. So any words of praise such as “yummy” or “delicious,” when I served this meal was a joy to hear. As we all devoured on this meal, I was beaming with a sense of accomplishment.
This SUPER EASY meal has a flare of Asian spices in it and the coconut milk just stood out to from the Thai curry powder. The sweet potatoes added cream and thickness of the soup. There is a very gentle sourness due to the lime zest but it is not overpowering that makes this meal unique and very distinct from any curry recipes you have tried. And then the cooking time is so fast I know I said it already, but yes… 30 minutes max cooking time!
The secret is to thinly slice beef into strips and slice the sweet potatoes into small cubes. You can add rice to this meal or you can eat it by itself . Ingredients
- 2 tablespoon vegetable oil
- 12 ounces steak
- 2 cloves garlic
- 1 medium sized onion sliced
- 12 ounces sweet potato chopped in cubes
- 2 tablespoons Thai Red Curry Paste
- 1 1/2 cups coconut milk
Instructions
- Heat vegetable oil in a large pre heated wok.
- Add the steak and stir fry for about 2 minutes
- Add the garlic to the wok and stir fry for another 2 minutes
- Add the sweet potatoes with the curry paste and coconut milk and bring to a boil.
- Reduce the heat and simmer until sweet potatoes are tender.
- Serve hot with rice.
