MOTHERHOOD… is exhausting. Please raise your hand if you agree with me. I have two teen agers now, a 15 year old and 11 year old, and I must say it has become really difficult to keep up with them. My daughter has all these flare ups and now in one word conversation mode and my son just gets angry out of nothing. I look back on how my parents raised me and I thought they are lucky to have me… I was an utterly obedient and good kid – really, I am telling the truth. Could it be because of cultural differences, or am I just in a different generation? I do not know but I tell you, I am currently in my wits end…
But inspite of all these challenges, they also make me feel proud of being their mother. It humbles me and it makes me look at life in their generation rather than be caught up on my ideals on how life is suppose to be for them. Motherhood has also made me more prayerful, as I have come to realize that I just have to rely on my faith as I let them go to carve their own paths. Wishing that somehow, the good seeds I’ve sown in their lives will not go to waste. I cannot impose my wisdom on them anymore and a time will also come in which they just have to learn life the hard way… I cannot protect them all the time and although it pains me, I just have to look from the distance as they stumble and learn…
This beef stew is my daughter’s favorite. I made this all the time because she becomes “friendly” with me when I make this. She requested me to cook this beef stew for her pot luck in school and her friends like it too, so I am sharing the recipe today. I got the recipe from my favorite cookbook but I changed the ingredients to fit on out liking and my schedule; so I hope you like it…

Ingredients
- 2 lbs beef sliced into 1.5 by 1.5 inch
- 1 can 14.5 oz beef broth plus 1 cup of water of broth add 1 cup or more broth if you want the soup to be thin
- 2 red delicious apples divide by 4 ( peeled and cored)
- 1 large sweet potato around 1 lb or 27 oz peeled and slice into big chunks, 1.5 inch thick
- 1/4 cup onion chopped
- salt to taste.
Instructions
- Place the beef, apples, onion, sweet potato and broth and crock pot on low overnight - 7 to 8 hours. When ready to serve, add salt to taste. Enjoy.

Do you precook the beef or just put it in the crockpot raw?

Sorry, I hope I’m not too late responding your comment. Using Butternut squash will change the taste of this recipe. You will miss the sweetness from the sweet potato; although the texture will be the same. Thanks for visiting.
