Key lime pie with condensed milk to make it smooth and creamy. Then I cheated by using a sugar free graham crust to make it a very very easy pie recipe. This recipe is from Ree Drummond recipe book Pioneer Woman Cooks Year of Holidays.
I went to the library today and I borrowed a cookbook written by Ree Drummond. She is a famous blogger who became an author and she got her own show in Food Network. Boy, she is one of a kind.
Key Lime PieReading her cookbook and her writing, I can tell why she became a hit. She has the talent to write, she has the looks of success and her life is really interesting. She lives in a ” million” acre cattle farm, she homeschools her children and she married a cowboy.
As I was poring through the pages of her book and her recipes, I noticed that my tan and lightly browned skin is turning into green. The green monster of jealousy and envy turn me into green colored envious, pathetic loser.
Fire crackers of these thoughts came like a relentless bullet. Shooting me on the chest. “Boy, I do not even have a yardage of land to boast about… and my husband’s career, an engineer, is nothing compared to her husband who work hard as a cowboy.”
Now, I am turning into a dark green grinch.
“I do not even have a dog compared to her thousand of cows. What a lucky girl. Then what about me? Crap, I cannot even make my own pie from scratch as Ree Drummond has meticulously described in her step by step guide on how to make a home made pie crust. LIFE IS NOT FAIR.”
To find fault on her perfect existence, I want to see that she ,somehow , has a flaw. I made her Key Lime Pie. I am hoping in all hopes that this pie will turn out to be the crappiest pie I have ever eaten in my entire life so that I can prove that there is no such person who can be as perfect.
And true enough, this pie, Ree Drummond’s pie, is soooooo good. Is she even human? This pie is so delicious and of course, she made me more of a utter loser because she made her pie crust from scratch, whereas me, I am using the graham pie crust from the store so that it will be really easy to make. I think the only accomplishment I get with this pie compared to Ree, is that I used sugar free and low-fat Graham pie crust. Now fangs are growing out from my mouth and the green hairs are metaphorically sticking out out from my nose … I am a green monster now. I VOW I WILL MAKE MY PIE CRUST TOO… UHMMMM, MAYBE SOON? UHMMMM – hopefully?

Key Lime Pie Ingredients
Key Lime Pie
Ingredients
- 1 14 oz can condensed milk
- 2 egg yolks
- 1 tbsp grated lime zest
- 1/2 cup lime juice from 2 key lime or 1/4 cup key lime juice from 1 lime. I used the 1/4 and still very delicious
- 1 sugar free Graham Cracker Crust
Instructions
- Pre heat oven at 350 F and pre bake the graham crust for 5 minutes. When done, let is sit until cool. Meanwhile, place egg, key lime, key lime zest, condensed milk and egg yolks on the mixing bowl. Mix them until smooth. Pour the filling into the cooled pie crust and bake for 15 to 18 minutes or when it is set. Refregirate before serving. In my case, I ate it when it was already cool. So yummy!
