What is Chao Fan
Chao Fan is a Chinese-inspired Filipino fried rice. This has been made famous in the Philippines as Chowking Chao fan which is a Filipino food chain in the Philippines. Chao Fan uses various simple ingredients readily available in Filipino markets and groceries.

Chao Fan Ingredients:
- Egg-serves as an extender and they add texture and taste to the fried rice.
- Soy sauce and oyster sauce- two sauces that elevate the taste of this meal. You can use dark soy sauce or light soy sauce.
- Sesame oil- we add this towards the end of the cooking. Roasted sesame oil adds a distinct and subtle taste to the fried rice.
- Ground chicken-ideally you use beef as meat, but in this case, I use ground chicken.
- Rice- I used five cups of day-old rice. Don’t use freshly cooked rice, since it makes the fried rice too watery and soggy.
- Mix beans and carrots- you can directly add this without thawing.

- Heat oil on medium heat and add the beaten egg.
- Cook the egg and shred it into medium-sized pieces.
- Remove the cooked egg and add in the remaining oil.
- Cook the meat.

- Add the frozen peas and carrots.
- Mix and add the rice
- Add the egg.
- Add the Roasted Sesame Oil
How do You Store?
- You can make a huge batch of this Filipino Fried rice and store it in the fridge or you can freeze it too. Simply thaw on the counter and microwave covered with a damp paper towel for two minutes.

- Why can’t I use freshly cooked rice?
Freshly cooked rice tends to be moist and yields a bowl of wet fried rice. Using day-old rice yields a dry rice texture and not soggy fried rice.
- Can I use frozen rice for my fried rice?
Yes, you can. Thaw the frozen rice before adding it to the meat and veggies mixture.
- Can I use a different type of meat, or non at all
You can use any meat you want. Or totally skip the meat in this fried rice
- Can I make this vegan?
Yes. Skip the meat and egg and replace them with tofu.
Why is Chao Fan Different from other Fried Rice
Chao Fan uses various proteins in its recipe, unlike the other types of fried rice wherein there is only one type of meat or protein in it. For example, some fried fried rice uses only shrimp or char siu. You can add as much meat as different types in this meal.

Ingredients
- 4 large egg beaten
- 1/4 cup canola oil
- 1/2 lb minced chicken
- 1 cup frozen peas and carrots
- 1/4 cup soy sauce
- 3 tbsp oyster sauce
- 5 cups day-old rice please see notes on how to cook rice
- 2 tbsp Roasted Sesame Oil
Instructions
- Heat half of the oil on medium heat and add the beaten egg.
- Cook the egg and shred it into medium-sized pieces.
- Remove the cooked egg from the pan and add in the remaining oil.
- Cook the meat at medium heat until it changes its color and add half of the soy sauce and half of the oyster sauce. Mix until the meat is coated with the sauce and add the frozen peas and carrots. Cook until the peas and carrots are thawed. About four more minutes.
- Add the rice. Mix the ingredients together until the rice is coated with soy sauce. Add more sauce if you need to. Season according to your liking.
