Best Turmeric Yellow Rice with Chicken (Instant Pot)
Why does this recipe work?
- It’s quick and easy- the ingredients for this recipe are easy to come by. They could be probably in your pantry, and it only takes seven minutes to cook in the Instant pot.
- Turmeric added- adding turmeric to this meal not only adds yellow color, but it gives it a hint of distinct earthy flavor.
- Good for the next day- you can make a huge batch of this yellow rice and refrigerate it for up to fives days.
Equipment
1 Instant Pot Duo Crisp Plus Air fryer lid 8 quart
Ingredients
- 1/4 lb chicken thigh skinless or skin and bone in. Chop into bite-size
- 1/2 tbsp onion powder
- 1/4 tsp turmeric
- 1/2 tbsp garlic powder
- 1/2 tbsp unsalted butter you can substitute with cooking oil
- 2 1/2 cup coconut milk
- 1/2 cup water
- 1 pc Pandan leaves
- 3 pcs dried bay leaves
- 1/2 tsp salt to taste
- 2 cups Basmati rice you can substitute with Jasmine rice or long grain rice.
- cilantro and sesame seeds for garnish
- salt to taste
Instructions
- You can wash your rice if you want, I don’t wash it. If you do, lessen the water remove 1/8 cup of water.
- Prepare the Instant Pot: Put the inner pot into the Instant Pot base and push the sautee setting. After three minutes, add the butter. Brown the chicken on all sides and add the rice and spices. Mix the ingredients together and add the water and coconut. Add the bay leaves and pandan leaves on top.
- Cancel the sautee setting and press the pressure cook setting. Cover with the pressure cooker lid and push the pressure cooker button. Set the pressure to HI and set the time to seven minutes. Quick release when done.
- Season with salt if it’s not salty enough for you. Garnish with cilantro and sesame seeds.
