For this recipe today, I marinated the chicken with my homemade sauce. I also fried the eggplant in the instant pot and add it once the rice is cooked to steam for a few minutes. This is so good. I swear!

Mince Chicken Marinade
- Sesame oil
- Sesame Seeds

- Soy sauce

Rice Sauce
- Soy sauce

Here’s how you Make it
- Marinate the minced chicken. Cut the Eggplant into bite-sized pieces.
- Make the rice sauce and set aside.
- Push the saute button of the Instant Pot and brown the eggplants on all sides.
- Saute the garlic and add the rice and water. Push the pressure on HI and set the timer to seven minutes. Quick release.
- Put the prepared eggplant on top and the cooked chicken. Push the steam setting and set the timer for two minutes. OH
MINCED CHICKEN EGGPLANT RICE (INSTANT POT)

Ingredients
Main Ingredients
- 2 cups rice
- 2 1/2 cups water
- 150 grams eggplant slice into cubes
- 1/2 lb mince chicken
- 2 tbsp cooking oil
- 5 cloves garlic chopped
Mince Chicken Marinade
- 1/2 tbsp chili powder
- 1 tsp white granulated sugar
- 1 tbsp soy sauce
- 1 tbsp Roasted Sesame Oil
- 1 tbsp sesame seeds
- 2 cloves garlic, minced chopped
Rice Sauce Ingredients
- 2 tbsp Roasted Sesame Oil
- 1 tbsp soy sauce
- 1 tbsp sesame seeds
- 1/4 tsp white granulated sugar
- 1/2 tsp chili powder please see notes for the recipe
Instructions
Marinate the Chicken
- Place the chicken in the small-sized bowl and add all of the marinade ingredients. Mix the ingredients together and cover them with plastic wrap. Let it sit in the fridge for thirty minutes.
- When the chicken is ready, place the inner pot into the Instant pot base and push the saute button setting. Add the cooking oil and wait for five minutes.
- Brown the eggplant on all sides and drain the excess oil in a paper towel. Set aside.
- Add more oil if needed. Add the chicken. Cook the chicken until it changes its color. Remove the chicken from the pot and set aside.
- Saute the garlic in the pot and cook until brown. Add the water. Gently scrape the bottom using a spatula or wooden spoon. Cancel the saute setting.
- Add the rice to the pot. Push the pressure cook button setting. Cover the pot with the pressure cooker lid and set the timer to seven minutes. Quick release when done.
- When the rice is ready, put the prepared eggplant on top and the cooked chicken. Cover with the pressure cooker lid and push the steam setting. Set the timer to two minutes. When this process is done, pour in the rice sauce. Fluff the rice with a fork and serve.
