This Pot of Chicken and Rice comes together quickly. It’s cooked in my Instant Pot and it makes for an easy, and delicious dinner that your family will love. This is also cheaper compared to using chicken breast.
One Pot Chicken and Rice
If you followed my blog, you may have noticed how much I love my Instant Pot. I have used it to cook almost every meal I make at home. And this right here is another easy dinner- One Pot Chicken and Rice. I added my homemade spices to season the chicken thigh and I used the chicken broth from when I cooked chicken breast.
It’s getting really expensive now, therefore budgeting is more crucial in times like this. If you can jump on to my budget category, there are some budget-friendly meals that you can cook at home.
Equipment
Note that I used my Instant Pot Duo Crisp plus Air Fryer to cook this chicken and rice. Every Instant model may differ, so check your manual.
Easy One Pot Chicken and Rice ingredients
Homemade Dry Rub
- Turmeric
- Garlic powder
- Onion powder
- Cajun Seasoning
- Montreal Chicken Seasoning
One Pot Meal Ingredients
- Chicken thighs -you can use boneless or bone-in chicken thighs.
- Rice- you can use Jasmine rice and sushi rice. If you use brown rice, ad 1 1/4 cups of broth per cup.
- Chicken broth – you can store-bought chicken broth. In my case, I use the broth from when I am cooking shredded chicken breast.
- Onion- red or yellow onion
- Tomato
- Cilantro
How do you cook Chicken and Rice in the Instant Pot
- Generously rub the chicken with the homemade rub. Mix all of the homemade spices and rub them all over the chicken thighs. I let the chicken sit in the fridge for thirty minutes and I start with browning the chicken thigh on both sides.
- Set the Instant pot in a sautee setting. Set the time for thirty minutes and add the oil. Wait for three minutes and add the chicken thighs Let the chicken thighs cook for six minutes on both sides. I often set my timer and use it. If the six minutes is up, turn the to another side and cook fit six minutes. Remove the chicken thigh to another plate.
- Using the same inner pot, Add the onion and tomato, and cilantro. Let it cook for two minutes and add the rice. Mix the rice coating it with the onion, cilantro, and tomato. Add the chicken broth and level the rice. Add the prepared chicken thighs.
- Cover with the pressure cooker lid and set the timer for seven minutes. Set pressure to HI. When done, quick release and enjoy.

- 1 medium tomato chopped
- 1/4 cup cilantro chopped
- 1/2 cup onion
- 2 cups jasmine rice
- 3 cups chicken broth
- 4 pieces chicken thigh
Instructions
- Mix all of the rub ingredients together and rub them all over the chicken thighs. I let the chicken sit in the fridge for thirty minutes

I loved this dinner! The rice and chicken were so moist and flavorful. I didn’t have fresh cilantro, but made due with 1 tablespoon added to the chicken broth. This will be made again at my house, for sure!
